Fresh Catch, Fresh Flavors

Mahimahi Overview

(Dolphinfish)

The mahimahi is a favorite of fishermen and diners throughout the islands.

Anglers enjoy the acrobatics this fish is capable of when it takes a fishing lure. These dolphinfish are also extremely vibrant and beautiful in color when brought aboard the boat.

Foodies enjoy the many delicious recipes that showcase this well-known fish. Gourmet chefs have created culinary works of art presenting this delicious treat in their high-end restaurants. Local neighborhood restaurants also offer sandwiches and simple café style preparations of mahimahi.

Mahimahi has white tender meat, moist and mild, which lends itself easily to many different recipes. Some fishermen prefer mahimahi when it is larger than 25 pounds in size, which they say produces fish fillets with stronger flavor and character.

In the Hawaiian language, mahimahi loosely translates as "strong-strong." Elsewhere it is known as dolphinfish, not to be confused with the marine mammal. And in much of the world, it is known as dorado, Spanish for "golden."
