Fresh Catch, Fresh Flavors

Ahi (Yellowfin Tuna) Overview

Of the many types of marlin that make its way to the marketplace, the nairagi, or striped marlin, caught in Hawaiian waters is the most popular.

The tender fillets produced from nairagi are chosen for many raw fish recipes such as sashimi and poke. Seafood gourmets also consider the nairagi to be superior in quality compared to other marlin species when recipes suggest grilling, sauteing or smoking.
