Grilled Mahimahi with Sesame Soy Sauce

Ingredients:

  • 4 x 8 oz. mahimahi fillets
  • ½ c. olive oil
  • 2 Tbsp. lime juice
  • 2 Tbsp. fresh cilantro, chopped
  • 1 tsp. thyme
  • ½ tsp. pepper

Sesame Soy Sauce

  • ¼ c. rice wine vinegar
  • 1 tsp. ginger, grated
  • ¼ c. soy sauce
  • 2 tsp. Dijon mustard
  • ¼ c. sesame oil
  • ¼ c. peanut oil
  • 2 tsp. hot chili oil
  • 2 Tbsp. sesame seeds, toasted

Instructions

  1. Whisk together olive oil, lime juice, cilantro, thyme, and pepper to create a marinade.
  2. Pour into a zip top plastic bag and add mahimahi fillets.
  3. Shake bag to coat fillets and marinate in the refrigerator for 1 to 2 hours.
  4. While the fish is marinating, prepare the sesame soy sauce in a food processor or blender. Process the rice wine vinegar, ginger, soy sauce, and mustard until just blended, about 10 seconds.
  5. With the food processor still running, slowly add the sesame oil, peanut oil, and hot chili oil.
  6. Transfer marinade to a bowl and mix in sesame seeds.
  7. Preheat a grill to medium-high heat.
  8. Cook for 3 to 4 minutes on each side.
  9. Serve with the sesame soy sauce.
